How’s this for an easy, yummy, healthy, kid friendly dessert! It has all the probiotic goodness of coconut kefir plus the tropical sweetness of banana and mango. Flaxseed meal gives it a lovely thick pudding texture, as well as being a source of fibre and Omega 3s.
Ingredients
coconut kefir made from 1 x 400gm coconut cream or milk
1 banana
3/4 cup of mango
2 tablespoons of flaxseed meal
Method
Blend all the ingredients together with blender or food processor, until smooth and well mixed. Refridgerate for 2 hours to allow to thicken. Serve by itself or as a topping on fresh fruit.
Best consumed within 2-3 days
